Welcome to Everyday Vegan Kitchen! My goal is to share my love for plant-based food and nutrition with you in the form of easy-to-make, healthy recipes that can be made every day. From early morning out-the-door breakfasts and busy weeknight dinners to lazy Sunday scrambles and homemade muffins, these recipes are quick and easy enough for any day of the week, with pantry staples that (hopefully) won’t send you scrambling to the grocery store every time you want to try a recipe. Vegan cooking shouldn’t be thought of as too difficult, expensive or unattainable, so I’m here to show you that it’s fun to get in the kitchen and create delicious vegan meals, just as I learned myself. I hope you enjoy them as much as I enjoy sharing them with you.
I began my plant-based journey a few years ago when I went from eating the standard American diet to a vegetarian diet. I had always felt a pull toward full veganism, but felt as though I couldn’t commit because I was a young college student, didn’t have great cooking skills, or the time and money and invest in a new lifestyle that seemed (at the time) like a lot of work. However, once I reorganized my priorities a little I realized how simple it can be to cook and eat vegan meals! I fell in love with cooking plant-based meals, I taught myself to use spices and herbs that I had never heard of, and I learned how to cook with the vegetables whose names I didn’t even know how to pronounce growing up. It was a huge lifestyle change for me, and I feel as though I continue to learn and grow each day. There will always be more to learn, but right now I’m focusing on honing my cooking and baking skills in order to produce wonderful plant-based recipes for you to try!
