Happy Monday, friends! I hope everyone had a wonderful weekend. I followed up a full week-long (!!!) birthday celebration in Bend, Eugene, and Portland with a day trip to the Columbia River Gorge with some friends for a hike up Coyote Wall, a game of frisbee and a swim at the river, and of course, a delicious dinner and drinks to finish the night off. I’ve been so very pleasantly surprised to see the summer weather holding out for a few more weeks while I’m on a break from school, it gives me extra time to get outside and explore parts of the city that I was too busy to see during the summer term!
One very exciting development that has happened for me over the last few weeks is a partnership between Everyday Vegan Kitchen and a snack bar company called Color Bar. Color Bar specializes in creating whole food, plant-based nutrition bars with the healthiest, most nutrient-dense ingredients possible.
